Do any of you guys play dogfight using some model of bluetooth joystick?
If so, does it make a better gameplay experience?

Don't use joystick, especially bluetooth. Bluetooth drains your battery at an impossible rate, and you can't turn as fast with a joystick, anyway. All of the vets use motion control.

I personally liked it. If I had an iPad or Kindle (basically anything with a larger screen), I'd switch to bluetooth keyboard/joystick.

I had to use a special jailbroken program to use the joystick in place of the tilt sensor. Which was a pain to configure.

However, I do not own the joystick; I was just trying it and a Wii-mote my friend programmed to run on bluetooth. It was pretty cool, he was playing various emulators on his iDevice via Wiimote

I find it annoying to play with a charger in. Then again... Joystick... Yeah.... Okay...

You still have the issue of turning speed, however.

Speaking of turning speed, Slender, do you still play at 70% sensitivity?
